Step two: Make Sichuan pepper oil.
Pour oil into a pan, add Sichuan peppercorns, heat until the oil smokes, then fish out the peppercorns and discard them. Pour that sizzling hot oil directly over the greens.
That one step completely transforms the flavor. There's this indescribable "fragrance" that doesn't overpower the vegetable's own taste. If you don't have Sichuan peppercorns, garlic crispy oil works great too.
Step three: Salt β and the secret β MSG.
Add MSG. No other seasonings needed. Just MSG, and it's "100% restaurant-quality." MSG is just monosodium glutamate β clean ingredients, fine in moderation.
